Kumara brownie

Makes 16


500g orange kumara, boiled & mashed

100g coconut oil

5 eggs

2 teaspoons vanilla extract

1/3 cup coconut flour

1/3 cup cacao powder (or unsweetened coco powder)

100g chopped nuts (walnuts or pecans are good)

1/2 teaspoon baking powder

4 tablespoons cacao nibs (optional)

While the mashed kumara is still warm mix in the coconut oil.  Add the eggs, vanilla, chopped nuts and cacao nibs (if using) into the kumara mix, combine well.  In a separate bowl mix the dry ingredients togethers - coconut flour, cacao powder and baking powder and then fold them into the kumara mixture.


Put the brownie mixture into a greased square or rectangular baking dish, gently pressing it into the shape of the dish.  Bake in a 180 degree oven for 25 minutes, or until a toothpick comes out clean when inserted into the middle of the brownie.


*Note - This is a sugar free recipe and will not taste sweet like a traditional brownie.
