Zucchini linguine

Serves 1

 

125g zucchini – approx. 1 medium-large zucchini

2 tablespoons basil pesto

1 large tomato, cut into wedges

6 kalamata olives, sliced

Squeeze of lemon juice

Directions:

Slice the zucchini thinly with a mandolin slicer, food processor or using a good knife – essentially you are aiming for thin narrow lengths of the vegetable.

 

Add the pesto, tomatoes, olives and lemon juice and mix through and enjoy!
